Shrimp Scampi
Scampi - From the word itself "Scampi", is also a dish of shrimp served in garlic butter and dry white wine, served either with bread, or over pasta or rice, although sometimes just the shrimp alone. Most variants of the "shrimp scampi" comes on pasta.

- 1 Pound Pasta
- 1 Pound Shrimp (With or without shell)
- White wine
- 4 Tablespoon Butter
- 4 Tablespoon Olive oil
- 2 Cloves minced Garlic
- 2 Finely diced Shallots
- 1/4 cup of finely chopped Parsley
- 1 Lemon
- 1/2 cup dry White Wine
- Salt and freshly cracked blacked pepper
Boil a pot of salted water . Cook pasta into the boiling water until nearly tender. (6 to 8 minutes) Then drain.
Melt 2 tablespoons butter in a large skillet together with the 2 tablespoon olive oil over a medium heat.
Saute the shallots and the garlic until the shallots are translucent. 3-4 minutes.
Season the shrimp together with the salt and pepper, then place them to the pan and cook until the shrimps turned pink(-ish) 2 to 3 minutes.
Remove the shrimp from the pan, set aside and keep the shrimps warm.
Pour white wine and lemon juice and bring to a boil.
Add 2 tablespoon butter and 2 tablespoon olive oil. And after the butter melts, return the shrimps into the pan together with the parsley and cooked pasta.
Drizzle a little amount of olive oil before serving.
